This was a very special project melding together my two greatest loves; food and travel. I had a very personal connection being that it was about Italy where my family was from, but had the unique opportunity to look at the country and cuisine I, like most people, know so well through a completely new lens: Kosher.

What I discovered was that in a country that protects how their staple products are made and sold, through age old laws and traditions, which guarantee their superior quality, and then you add on a completely new set of high standards held by the Kosher community, what you get is a product that is unbelievable rare and cherished of the absolute highest magnitude. Something I didn't even think could exist, and the amazing artisans and purveyors that go through this amazingly difficult process to ensure both set of standards are upheld, have an unwavering passion for what they do that has simply no comparison. This was pure inspiration and enlightenment to discover Italy through these new set of eyes.
