Director Statement

Food is never just about what is on the plate; it is a living map of human migration, resilience, and identity. As the "Travelling Monk," my journey has always been about chasing stories that connect us. With this documentary, I wanted to explore a phenomenon I’ve witnessed all over the world: how the sacred art of the Tadka—the tempering of hot oil and spices—has served as a sensory bridge keeping the South Asian diaspora tethered to their roots.

Filming across the bustling streets of London, the historic culinary hubs of Southall, and cross-cultural kitchens in America was an eye-opening experience. I wanted to move past the superficial stereotype of Indian food as just a "weekend takeaway" and instead honor it as a survival mechanism of the soul. Meeting incredible culinary icon Chef Dipna Anand and passionate trailblazers like Ranjit Singh revealed the deeply personal sacrifices behind the global curry houses we often take for granted.

Capturing the lively debates on the street—whether Chicken Tikka Masala truly reigns supreme over Fish & Chips—showed me that flavor is where cultures truly integrate. This film balances the mouth-watering technicality of a 15-spice Garam Masala with the raw emotional nostalgia of a plate of Sooji Halwa made by a father.

Ultimately, this documentary is my tribute to the kitchens that refuse to let their heritage fade, making foreign lands feel a little more like home, one spice at a time. I hope festival audiences leave not just hungry, but with a deeper appreciation for the migrant stories baked into every single bite.
